sourdougg cinnamon pecan rolls

 I said, you should expect some more sourdough recipes and I have at least one ( I would have posted another, but you win some and you loose some. Betty crocker had to make a few flopped biscuits before she got the signature recipe). I also failed at getting a pic, but this is partly because they were all gone by the time i was gonna get around to taking a picture. Says something about these sweeter-side sourdough morsels. :)

SOURDOUGH cinnamon pecan rolls


Dough:

1 cup sourdough starter (fed)
1/2 cup whole milk
1 3/4 cup unbleached flour + extra for dusting your surface
1 t vanilla extract
2 T sugar
1/4 t salt
1 T butter

Filling:

1/3 cup brown sugar
1/3 cup pecans
2 T melted butter
1 1/2 tsp cinnamon


Directions:

1. Combine dough ingredients. Knead the dough for about 5 minutes.
2. Set dough in bowl and. Cover with towel overnight.
3. The next morning roll dough out on floured surface with a rolling pin. Roll into a rectangular shape.
3. Combine filling ingredients except for the butter. Brush butter over dough and sprinkle with filling.
4. Roll lengthwise and cut into cinnamon rols.
5. Cover with towel. Let rest for 1 hour.
6. Heat oven to 350 degrees.  Bake 25 minutes. Serve warm, preferably with coffee or tea.

As I said, the ladies loved em. Next time I think I'll make a brownsugar caramel sauce to drizzle and bake 'em in. If you try this before I do let me know so we can share the  joy. :)

sourdough muffins

This has been a week of sourdough :) last night I made a 15-bean cajun soup for my house and what could go better with that than muffins? Much less sour dough muffins. Lets just say scrumptious and I have a couple more more sourdough recipes I'll be sharing this week, but this one is nice to kick it off. Simple sweetness blended with the sourdoughbmuffins made them wonderful.  Didn't even need honey to top em off.

SOURDOUGH MUFFINS

/2cup starter
1 1/2cup flour
1/2cup butter
2eggs
1tsp salt
1tsp baking soda
1/2 cup sugar

The night before mix together starter and flour. Let sit over night. The next morning heat oven to 375 and mix in the rest of the ingredients.  Spoon into muffin tins and bake for 30 min. Enjoy for breakfast, snacktime, dinner time, or anytime.

fiesta chicken soup

Happy birthday to me. Indeed, I'm good old 23, which most of my friends would say is still a baby.  So how did I celebrate? I heald a fiesta with my friend who also has a january birthday. we had salsa both the dabce and the dip.  With lots of left overs. So what better way to watch the grammys (shout shout out to macklemore and lorde) then  to turn your leftovers into soup and host a viewing. Here it is:
Fiesta chicken soup

1 Cup leftover shredded taco chicken (chicken and taco seasoning)

1cup  leftover rice and beans (rice with black or pinto beans fried in vegetable oil, sautéed onions and pepper. Garlic, chicken stock, diced tomatos, chilies,"red pepper, and salt).

6 cups chicken stock

Garlic
Red pepper
paprika
salt
pepper
Cumin

Place all ingredients in crock pot.  Cook on low fo 6 hours. Simmer to taste.  Enjoy the grammys.
P.s. totally the best day after party food. No effort required.

Sourdough english muffins

I've searching for a way to use up this sourdough starter I've been feeding in my fridge for about a month.

And yesterday I found them: sourdough english muffins!

These are fantastic. The first first few I made I didn't cook long enough and they were a lil doughy, but the rest were all out yum!

Sourdough english muffins.

Step 1. 1/2 cup starter
              1 cup milk
              2 cup flour
  Mix together cover with plastic wrap and let sit over night.

Step 2. 1tbs sugar
             3/4 tsp salt
            1 tsp baking soda
            1/2 cup flour
  The next morning mix in sugar, salt, and soda. Knead in remaining flour. Cover with plastic wrap and let rise for 5 minutes.

Step 3. Roll out dough on lightly floured surface.  Using a 2" diameter round cookie cutter, cut out rounds. Cover loosely and let stand for 45 minutes.

Step 4. Heat griddle to medium. Place rounds on griddle. Cook for 2 minutes. Flip. Cook for another 2 minutes.  Rounds should puff slightly. Remove and cool on cooling rack.

Step 5. Enjoy with coffee and jam :)

cheating white girl horchata

No, this isn't authentic, but I've heard it tastes pretty dang close.  Horchata, guera style. 
cheating white girl horchata
1 box rice milk
1/2 cup brown sugar
1tsp vanilla
1tsp almond milk
1 tsp cinnamon
Combine and refrigerate over night.
 Enjoy chilled. Best served over ice.
